醬，sauce，是法式料理的靈魂，Chef Alex 最重視的料理伴侶，也是最花心思琢磨的食材之一。與雲林西螺知名醬油廠御鼎興一起釀造，選用中壢農人張明鳳無毒契作的黑豆，天然又飽滿。Chef Alex親自為兩甕專屬的醬缸鹽封，然後交給時間醞釀。
 

純素製作，「但讓我們很驚訝的是，這款醬油竟然展現白旗魚炙燒的魚油香氣。」非常適合直接沾食，特意在製作過程中，手工將鹽巴篩除，降低鹽度，展現醬油圓滑的口感，沾食之外，和蔬菜的料理尤其搭配！
